Tips: Hot Or Cold Smoked Fish ? There are two main varieties of smoked fish — cold smoked, where the temperature must remain between 80 and 90 degrees Fahrenheit (26 - 32 Celsius), and hot smoked, where the temperature is between 120 and 180 degrees Fahrenheit (49 – 82 Celsius). Whether you are cold smoking or hot smoking fish, the procedures are basically the same. The main difference is the smoking temperature and how long your smoked fish stay in the smoker. How long will it keep? In the freezer: Fish prepared by either method will last many months if properly frozen. In the refrigerator : Cold smoked fish is preserved and will usually keep for several months in the refrigerator. Hot smoked fish is cooked and will only keep about a week in the refrigerator. 

The smoking house is a thermal treatment system that can be configured for drying, smoking, cooking, baking, cold smoking, shower cooling for sausage, meat, poultry and seafood products. The basic configuration contains the functions of drying, smoking and cooking, and other functions are regarded as options. These smokehouse are equipped with an electrical heating system, and steam heating with stainless steel exchanger coils is regarded as the alternative. The machines have three temperature probes to monitor the chamber temperature, core temperature and humidity, which can realize a real-time and synchronous temperature and humidity control. Those smokehouse adopt Siemens PLC programmable control, which can programmed and 99 recipes can be stored, including the parameters setting, operation condition and temperature curve display for each recipe. Another option is configuration of communication interface for connecting with computer that can monitor the smokehouse remotely on the parameters record, storage and programming during the production. Similar functional option is connecting with the printer to print out the temperature curve. Those smoke generators for the EXPRO smoke house are applicable for woodchips, they have the special device to wash the smoke, which can reduce the amount of the soot entering the smokehouse chamber as well as the smoke temperature. The smoke generator is equipped with flame detector and sprinkler system. Option of automatic cleaning system are specially used to clean the circulating fan and the smoke tubes. The smokehouse can be manufactured into straight-through and non-straight-through type. The straight-through type with both in and out interlock doors located at each end of the smokehouse for quick and efficient product through put, making it meet HACCP requirement on production with separated fresh and cooked areas. Single-trolley and multi-trolley capacities are available upon customers’ request on the production volume.
